In celebration of National Vegetarian Awareness, October 2011 – Here is an easy recipe for Weight Watcher’s Vegetarian Chili.  Photo taken at the Silverlake Farmer’s Market, Los Angeles.  Share your favorite Vege-Burger.

Ingredients

  • 3 carrots, diced
  • 2 1/2 cups diced peeled butternut squash
  • 2 yellow squash or zucchini, diced
  • 1 green bell pepper, diced
  • 1 red onion, chopped
  • 3 garlic cloves
  • 1 jalapeno
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can red beans, rinsed and drained
  • 3 tablespoons chili powder
  • 2 tablespoons honey
  • 1 teaspoon dried oregano
  • 1/3 cup barbecue sauce

Instructions

  1. Add all ingredients in the slow cooker, except honey and barbecue sauce. Then mix well
  2. Cover and cook 4-5 hours on high, or 8-10 on low
  3. Add the barbecue sauce and honey, stir and serve
